Prepare pan with a silicone or parchment baking sheet and pre-heat oven to 400°F.
Wash and peel sweet potatoes.
Dice sweet potatoes into ½- inch cubes.
Drizzle the potatoes with olive oil.
Add honey, red pepper flakes and Italian seasoning. Toss.
Bake for 35-40 minutes or until crispy.
