Getting a side dish on the table is a chore on certain days. This recipe is my family’s go-to air fryer recipe on busy weeknights. I often make roast air fryer potatoes with meatloaf, fish sticks, and maple-glazed pork chops.

  • One of the best ways to use an air fryer is to make air-fried potato crisps. Hot air circulates around the potatoes to get a perfect brittle, golden shell.
  • Insides are delicate, delicious with a smooth, supple texture. These roast potatoes are made healthier since they use less oil to cook in the air fryer.
  • It takes half the time to roast the potatoes with air frying than it does in the oven. It’s the best!

You just need a few ingredients to prepare these simple roast potatoes for supper. These items are likely already in your kitchen. Potatoes should be consistent in size and free of blemishes when you go shopping.

  • baby potatoes– also called “new potatoes”, any type will work, but I prefer Yukon Golds
  • olive oil– avocado oil or vegetable oil also works
  • salt
  • black pepper
  • garlic powder
  • Freshly chopped parsley: optional, garnish

It’s possible to find baby golden potatoes or Yukon Gold Potatoes if you look hard enough. Yukon Gold potatoes are the best for this recipe.

The EASIEST recipe

Anyone can make this simple recipe. I make it fun by the kids help out. This recipe is almost too EASY!

  1. First, wash the potatoes whole.
  2. Next, slice the baby potatoes in half.
  3. Then, add the potatoes into a mixing bowl.
  4. Add the olive oil, Italian seasoning, table salt, black pepper and garlic powder. Toss together ensuring the potatoes are evenly coated.
  5. Add the potatoes into the Air Fryer and cook, but be sure to turn halfway
  6. After 20 minutes, remove from the air fryer and serve immediately.

My favorite potato for getting a crisp and light outer shell is the Yukon Gold. However, with this recipe I also like to try variations of the following types of potatoes:

  • Russet- lots of flavor inside
  • Red- creamy and healthy
  • Sweet potatoes- rich in nutrients
  • “Baby potatoes” or “new potatoes” work easily with this recipe because they’re already tiny and chopping is a breeze.

  • Get creative and vary your spices in creative ways to roast air fryer potatoes!
  • For a flavorful Mexican combo, try seasoning your potatoes with cumin, chili powder, onion powder, cheddar cheese and a bit of lime juice after roasting. You may also top with a bit of cilantro.
  • Loaded potatoes: Toss the potatoes with ranch seasoning, bacon bits, chives, salsa and sour cream.
  • Extra healthy: add in other root veggies, like carrots, to the mix.

I like to keep the skin on my potatoes because it’s faster, easier and healthier.

If you remove the potato skin, you lose a bit of crisp, but you can still air-fry skinless potatoes. Just be sure to coat all the pieces to keep them from sticking to the inside of your air fryer basket.

First, add extra oil for tossing, then add a minute or two to the cook time, you’ll end up with crispier roast potatoes.

These are terrific as leftovers since they keep nicely in the refrigerator and freezer. Store these potatoes in the refrigerator for up to four to five days.

Store in the freezer for approximately 6 months in a tightly sealed in a zippered bag.

Reheat in the air fryer for 5-6 minutes at 400 degrees or in the oven.

  • Spray with an oil spray or brush the air fryer basket if desired.
  • Pre-heat your air fryer for extra crispiness and even heating.
  • Use a spatula or spoon to flip your potatoes over in the middle of cooking.
  • Become familiar with your air fryer Manufacturer’s instructions to determine temperatures and times that are essential for your model and make.
  • To ensure uniform roasting, cut potatoes into similar sizes.

  • 2 tbsp olive oil or avocado oil
  • 1 tsp Italian Seasoning
  • 1 tsp black pepper
  • 1 tsp table salt
  • ¼ tsp garlic powder

Instructions

  • Slice the baby potatoes in half. Place the potatoes into a mixing bowl.
  • Add the avocado oil, Italian seasoning, table salt, black pepper and garlic powder.  Mix together ensuring the potatoes are evenly coated.
  • Put the potatoes into the Air Fryer, cook for 20 minutes at 400F, turning after 10 minutes.
  • After 20 minutes, remove from the air fryer and serve immediately.
