Preheat the oven to 350 F. Prepare a parchment paper and grease a 8x8 or 11x7 inch baking dish.
Heat a large skillet with oil on medium heat. Add onion, bell pepper and cook for 1 minute then add garlic. Stir and cook until fragrant.
Add taco seasoning, smoked paprika, tomato purée, diced tomatoes and tomato paste. Stir and bring to a simmer.
Add chicken, red beans, sweet corn and coriander in the skillet. Stir and adjust taste with salt and pepper. Remove from heat.
Transfer chicken mixture in the baking dish. Spread cheese first then doritos.
Bake in the middle of the oven for 20-25 minutes.
Serve immediately hot.
