 I often serve these with a hearty dinner recipe, like my maple bourbon-glazed pork chops, or chicken drumsticks.

  • Yellow onion– or any sweet onion

It’s easy to make crispy fried potatoes! To get started, you’ll need a non-stick or cast iron skillet.

  1. First, heat your oil in a skillet on medium high heat.
  2. Then, add 1/4 inch sliced potatoes and fry!
  3. Half way through, add in the diced onion.

You’ll want to use a sweet onion, such as Vidalia, for this recipe.

Yukon Gold potatoes are the best for fried potatoes because they’re small enough to get nice and crispy in the skillet. However, any potato will do!

Just be sure to slice them 1/4 inch thick.

To keep your potatoes from sticking to each other or the skillet, it’s best to not pile a bunch of potatoes on top of each other. Fry them one layer at a time and flip after 3-4 minutes.

I love serving them with breakfast gravy or as a side to any Southern meal, like my southern meatloaf or air fryer bbq chicken drumsticks.

They should keep for about a day or two in the refrigerator. If reheating, I like to use the oven at 350 F for about 8 minutes.

I do not recommend freezing fried potatoes, as they are likely to fall apart or get mushy after thawing.

Vegetable oil: You can fry potatoes in bacon grease if oil is not available. This is a flavorful way to make breakfast home fries too!

You’ll know they’re finished cooking when they have a golden brown crispiness on the outside and a soft texture inside (kind of like a French fry).

Ingredients

  • 2 medium Yukon Gold potatoes
  • 2 tbsp vegetable oil
  • ½ yellow sweet onion
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  • Add oil to skillet at medium-high heat. Wait 2-3 minutes.
  • Slice potatoes ¼ inch thick using a knife or Mandolin slicer.
  • add one layer of potatoes to skillet, careful to not stack on top of one another.
  • After 3-4 minutes, flip if golden brown. Add onions, then flip again.
  • Serve when both sides are golden brown and crisp.
